- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
- Unfold the thawed puff pastry sheet on a lightly floured surface and cut into 12 equal squares or circles using a pastry cutter or knife.
- Place the pastry squares onto your prepared baking sheet, spacing them evenly apart.
- Cut the Brie into small cubes or slices roughly the size of a teaspoon.
- Mix the cranberries with sugar, orange zest, and cinnamon in a small bowl until well combined. The cranberries will start to soften and release their juices.
- Place a small piece of Brie in the center of each pastry square, pressing gently to set it in place.
- Spoon a small amount of the cranberry mixture over the Brie on each pastry, ensuring some cranberry bits are visible on top.
- Fold or gently roll the pastry edges over the filling, pinching to seal if needed, creating a neat pocket.
- Brush the tops of each pastry with the beaten egg to promote a golden, crispy finish.
- Bake in the preheated oven for about 15-20 minutes, or until the pastries are puffed and golden brown.
- Remove from the oven and let cool slightly before serving. The bites should be crispy on the outside with melted cheese and a bright cranberry topping inside.
